I just learned of Chef Almquist’s passing. As a student at the CIA he was the man that graded my first practical cooking exam. He tasted everything I made and went over it in detail with me. He then asked me questions as part of the verbal test and was very helpful in explaining himself. I didn’t do too well in that exam but I felt great about it because I had learned SO much in the process thanks to Chef Almquist. To this day i still use some of his analogies from that exam.
